Quite obviously, we attended the annual Pahiyas Festival in Lucban, Quezon last May 15, 2009. It was hell lot of fun! From the “sleepover” at Lenlen’s, to the bus ride, to the house hopping and picture taking. The trip had lots of highlights, including Tita Beth P0rras, the tourist guide who lacked transitional devices in her speech – making them utterly random; the oldies in the bus who were past pageant crown holders; Kristina, who apparently was the link between the church and the local government of Lucban who explained (to everyone’s surprise) that the true essence of kiping (the flat colored rice thingies) in the Pahiyas is Keeping Love.

How to make boiled icing + Happy Mothers’ Day!

Many would seem to agree with me that everything is G0ldilocks is delectable… except their chiffon celebration cakes. They’re beautiful – no doubt about it – but somthings really off, which just makes them delicious for the eyes but not fot the taste buds.

Recently, when Ate Evs (OADSPA Secretary) celebrated her birthday, Dr. Roque bought her a simple chiffon cake from a local grocery. It was good! Not that it looked good, but the cake was simply better than most popular brands out there. What I noticed with cakes that I liked is that its frosting were good, sticky, not so sweet and it melts in the mouth. The particular frosting is called a boiled icing, a traditional icing which is made from sugar and egg whites (as compared to the butter frosting used on most cakes, pastries and cupcakes).

I made my own version of boiled icing. (Compared to the butter frosting – used in Goldil0cks, boiled icing is A LOT HARDER to make. Chef Heny Sison once mentioned in her show that most commercial bakeshops tend to use butter frosting because it’s easier to do. Just blend butter with milk and confectioner’s sugar.) For the boiled icing, you’ll need:

1 1/2 cups granulated white sugar
1/4 teaspoon cream of tartar*
1/3 cup boiling water
2 egg whites
food color, optional 

 

instructions

1. In a heavy saucepan, combine the dry ingredients. Add the boiling water and stir until everything is dissolved. Heat until mixture boils. *Cream of tartar is an acid which gives the finished product a smooth and stable texture. It can be omitted if you’re sad.

2. Meanwhile, beat the egg whites until it reaches stiff peaks stage. That is, the egg whites would fluff up like dry marshmallows and would not not spill even when you turn the bowl upside down. CAUTION: The bowl and beaters must be completely dry so that the egg whites would whip. Any trace of yolk, water or oil would hinder proper whipping.

3. Boil the sugar mixture until it reaches the soft ball stage. It is when the mixture forms a long thread when the tines of a fork are dipped in the mixture, or when it is easy to form a soft ball when a small amount of the mixture is put on a bowl of cold water. This will take about 15 minutes of continuous boiling. If you have a candy themometer, soft ball stage is achieved when it reads 240 degress centigrade. At this point, pour the boiling mixture in a steady stream into the whipped egg whites and continue beating until mixture cools and is at spreading consistency. Mixture will become glossy.

4. Divide the frosting in parts and color to your heart’s desire. Use immediately. To use, spread using a spatula on bakedcakes.

Pictures + Cupcakes + Spatula + Books

Yesterday, I went to UP to retrieve the photos (taken by professional photogs) during our graduation. Lenlen and Liza accompanied me to get their photos, too.

Before things went by, we met up at the usual place – Math Club tambs. There were lots of new things, notably the new logbook with the newest love guru: Junelle aka Juni Mango. (To those who do not know, I was Math Club’s love guru for AY 2008-2009, second semester, under the pen name Jodi Mango. People would address their love problem to me, and I’ll andwer them back. It has been a hit among members, I must say.) Going back. Math Club’s still the same, though. Tarpaulin in the ceiling, people playing card games, people lying on the table. The usual.

I saw some birds landing at the club’s backyard. I squirted out, “Hey look, may mga doves!” Lenlen stood up, probably of curiosity (rather than one of her random movements). She looked bewildered.

“Pugo yan eh. Nasaan yung mga DOVES?”

Then we laughed so hard. I thought all birds, ranging from real doves, pigeons and crows, are doves. Now I know. :)

After lunch at The Beach House, we walked to the UP Film Center to get our pictures. 

Upon arriving, we were welcomed with so many pictures. AAAAH! We enjoyed looking at other people’s pictures; don’t know why. You can hear Lenlen from afar, “Uy si Alip! Uy si Scott 0ng!” while Izzay’s very busy looking for her own set. I got all my nineteen pictures; I didn’t bother to check if there are other pictures of myself misplaced. We left after arounf thirty minutes, I think. (It took me five minutes to get the pictures; it took Izzay 25 minutes.)

We proceeded to Glorietta — our usual lounge — to meet up with Janis Mae. But before reaching her, it was literally a whirlwind to ride the MRT. ARGH! But being the usual ingenuine people that we are, we managed to enjoy the very uncomfortable ride through (are you ready?) — PICTURES!

Upon reaching Glorietta, we thought that it was a familiar college memory to be back in this place where we usually hangout together. We contacted JE and Daniel if they can drop by to relive college; Unfortunately, they cannot.

Nonetheless, we continued having fun. We were hungry again. We helped ourselves with lots of sweets including cake slices and cupcakes!

I didn’t appreciate much Lenlen and Izzay’s cakes, but I bought a box of cupcakes which I find more appealing. This time, I tried Frostings Cupcakes. After tasting their Red Velvet cupcake, we thought to ourselves: It’s official. Sonja’s cupcakes are overrated. Obviously, since Frostings’ is bigger, cheaper, looks better and simply better tasting. You can cut through the cupcake without crumbs falling all over the place. It was served in the right temperature, the right sweetness, with a perfectly complementing frosting. I haven’t decided still, whether it was better than Ienne’s. (Their main difference is each other’s strength, I think. Ienne’s hava a unique cake texture similar to cross between a pound cake and a spongecake. Frostings’ invested in the right complement between the cakes and its… frostings.)Frostings Cupcakes

The other three cupcakes I ordered were the Sans Rival, Swiss chocolate and the Carrot cake; all of which are smakin’.

After much deliberation, we went to Landmark’s kitchenware store. I bought a flat metal spatula for only P70. I was looking not for a flat spatula, but for an offset one. I thought, though, that this one will do. Haha. Such a bargain day! ;)

I went home immediately after buying a novel and a magazine, and chatting again with Miss Narvas. *sigh*

(Loved the weather yesterday in Makati. Cloudy, but not rainy.)

Two of my closest mathematician friends are celebrating their birthday this May. Last Sunday (May 3), Rubie Gulay celebrated her 20th birthday alongside our schedule batch get-together. Today, Marianne Robles, celebrated her 21st birthday, along with Mark O’Connell and Lætitia Sadier. May the Lord continue to shower you both with more and more blessings. :D

After a long break from updating my blog, I thought to myself that I’d be contradicting my ‘blog purpose’ if continue with this idleness even more. But honestly, I indeed temporarily lost my interest for this. Well, not much, but still.  Someone already noticed the flood of Youtube videos and pictures from my previous posts. UGH.

1. As if no one knows, I already finished my bachelor’s degree in Mathematics. The ending of it all was a bit bittersweet. Admittedly, I was trying to spend each and every last second left with my dearest friends. It was hard, haha. On my last weeks, you would find me munching and strolling in High Street, lying flat on the grass in Sunken Garden, eating in Friuli and Gilligan’s in a single day, driving to Greenbelt from UP in the spur of the moment, etc. New world ahead!

2. I’ve been applying, albeit unsuccesful, to different jobs now. Haha, I must have been very picky. I’ve turned down an offer once and is hoping for the ones I really like. Heck, this is a turning point in my life and I don’t want to compromise anything.

3. Last May 1-2, I had my graduation party held here in our country-side home. :p I was surprised to see closest friends even those living as far as Quezon City, Bulacan and Nueva Ecija. To everyone there, I’m more than thankful for your presence. Thanks, Humpty Dumpty for making us happy. (Absent: Daniel, JE, Titus, Marianne, CoCo and Robin.)grad-party2

It was the first time I publicly announced and served my not-so-latest creation: Baked Britney. :) It was basically cut pasta in tomato-cream sauce infused with love, dance-beats, magic and basil. Recipe? I’m not sure if I want to share yet. ;) I also served my very own take on the English Banoffee Pie. Well, quite unsuccessfully creating the crust; the filling and topping worked the way it should.
